What makes ours different

Desiccated coconut is a volume commodity, but the gap between a bright-white, clean-tasting export-grade product and a yellowing, off-flavored one is the difference between a happy bakery customer and a recall. We specify fresh mature coconuts only (never over-age or pre-split), sulphur-free bleaching (we use nothing — our product's whiteness is natural from mature kernel), and microbial controls that hold Total Plate Count to industrial bakery specifications.
